Mini-tropical vacation at home?

My husband and I had wanted to take a Hawaiian vacation for our 5th wedding anniversary, but I sprained my ankle quite badly, and we’re not going to be able to travel. How can I make a special “mini” Hawaiian/tropical celebration at home for our anniversary? We live in Minnesota. The only idea I have so far is to get some pineapple…obviously I’m going to need something else besides just that!
